Chocolate Mousse Recipe – Dairy-Free & Paleo

There’s nothing that makes some people squirm more than mentioning the words “chocolate” and “avocado” in the same recipe, but hear me out: In this Chocolate Mousse, the avocado is hidden.

Promise.

I first published this recipe in September 2011, the very month Stupid Easy Paleo made its Interwebz debut.

As often happens with old recipes, I took one look at the photo and kinda cringed. It left little to be desired, and I knew I could do better.

See? Looks like a Rorschach test. Proof that anyone can improve at something if they practice enough.

So, after I whipped up a batch of this Chocolate Mousse, I plated it up fancy, took another photo, and set out to improve the whole post.

Alright, so you’re probably wondering why this recipe rocks.

First, it’s got hidden avocado as its creamy, dreamy base. That’s right…there’s no dairy in this recipe at all.

Don’t worry. The avocado, once blended, disappears into the background. You won’t even know it’s there!

Avocados are rad because they’re packed full of healthy fats, a majority of which is monounsaturated, and they’re surprisingly well-endowed in the Vitamin C department.

Just 100 grams of avocado contains about 16% of your daily Vitamin C value.

This Chocolate Mousse ingredient list is pretty short. Besides the avocado, it’s got cocoa powder (or cacao powder), coconut milk, a little local honey, and a dash of vanilla extract.

If honey isn’t your jam, use whatever sweetener you like. Maple syrup would work just fine and would pitted, soaked dates.

Feel free to cut back on the sweetener if you’d like, until it suits your tastebuds. Cocoa powder can be pretty bitter, so you’ll want something to break up that flavor.

If you can’t stand coconut milk, use whatever non-dairy milk you like: almond, cashew, etc. This recipe is pretty flexible so use your imagination, ‘kay?

I added a little bit of collagen peptides to give it a protein boost. Feel free to leave that out if you don’t have it. Not a deal-breaker.

I topped my Chocolate Mousse with a little bit of chopped almonds for crunch. You could also use cacao nibs or even some toasted coconut.

For best results, whip this up in a food processor. (I have this one.) It’s a bit tough to make in a blender because it won’t fill up the pitcher very much…

…But if you’re diligent about scraping down the sides, it’ll probably turn out just fine.

Chocolate Mousse

Ingredients
  • 1 ripe avocado
  • 2–3 Tablespoons unsweetened [url href=”http://amzn.to/1aHcNPi” target=”_blank”]cocoa powder[/url]
  • ~1/4 c. coconut milk
  • 3–4 Medjool dates (Note: Dates are notoriously hard to process down. You may also add honey instead if your food pro is on the weak side.)
  • 1 [url href=”http://amzn.to/1aTbgXB” target=”_blank”]vanilla bean[/url]*
Instructions
  1. Scoop out avocado and combine it with the cocoa powder, coconut milk and dates in a food pro.
  2. Split the vanilla bean lengthwise, scrape out the seeds, and add to the food pro.
  3. Blend!
  4. For best results, refrigerate until chilled.
